We call it Cobaita because, if you are not Sicilian, to be able to say ‘a Gghiugghiulena’ without getting your tongue in a twist would be crazy. And this traditional dessert from Modica and of the December festivities isn’t half bad. It is a crunchy pastry of Arab origin, made with ingredients that tell the story of the territory – toasted almonds, sesame, sugar – gently held together by honey from the Monti Iblei.
