Let’s face it: artisan pasta is an essential dish on every kind of menu. So we chose one of the real ones, which can stand up to the encounter with the sauce and retain the flavour of wheat and genuinity. Thanks also to bronze drawing and slow, low-temperature drying. Spaghetti and linguine, busiate and penne, thimbles and gramigna, fusilli and tortiglioni… the Sicilian artisan pasta on sale in our online shop is made with flours from hard, ancient grains: Russello and Timilia, varieties of wheat that have existed in Sicily for thousands of years and have no thankfully returned to being cultivated, protected and used. One last note on the mineral water used in the dough: it comes from a spring in the Nebrodi mountains, famous for its sensory properties.
